Ingredients

  • 100 grams active sourdough starter

  • 60 grams flour

  • 20 grams whole-wheat flour

  • 33 grams milk

  • 1 teaspoon olive oil

  • 1/2 teaspoon salt

  • Optional: chopped scallions, sliced shallots, or 1/4 teaspoon garlic/onion powder

Directions

  • Stir together starter, flour, milk, oil and salt until combined, then turn out onto well-floured surface and knead for a few minutes until smooth and no longer sticky – adding extra flour as required.
  • Shape into a ball, cover, and rest at least 30 minutes or up to overnight.

  • Divide the dough 2-4 pieces, then roll into 1/4 inch rounds.
  • Heat a non-stick pan over medium-high heat with drizzle of olive oil, frying each round 1-3 minutes on each side until nicely browned.

Notes

  • For fluffier bread with shorter resting time, mix in 1/2 teaspoon baking powder.
