100 grams active sourdough starter
60 grams flour
20 grams whole-wheat flour
33 grams milk
1 teaspoon olive oil
1/2 teaspoon salt
Optional: chopped scallions, sliced shallots, or 1/4 teaspoon garlic/onion powder
Directions
- Stir together starter, flour, milk, oil and salt until combined, then turn out onto well-floured surface and knead for a few minutes until smooth and no longer sticky – adding extra flour as required.
- Shape into a ball, cover, and rest at least 30 minutes or up to overnight.
- Divide the dough 2-4 pieces, then roll into 1/4 inch rounds.
- Heat a non-stick pan over medium-high heat with drizzle of olive oil, frying each round 1-3 minutes on each side until nicely browned.
Notes
- For fluffier bread with shorter resting time, mix in 1/2 teaspoon baking powder.
