1 large eggplant
2 tablespoons flour
1 tablespoon corn flour
1 tablespoon whole wheat flour
1/4 tsp garlic powder
1/4 tsp onion powder
50 ml water, more as needed
Panko bread crumbs
Directions
- Slice ends off eggplant, then into 1/2 inch rounds and salt both sides.
- Preheat oven to 220C fan-forced, and line 2 baking trays with silicon mats.
- Combine dry ingredients in a bowl, then stir in water until it creates a thin drizzly paste. Set up bowl next to it with panko bread crumbs.
- Dredge each slice of eggplant in the flour mixture, then press into crumbs before placing onto baking tray.
- Spray with oil, then bake for 15 minutes until lightly browned on top.
- Pull out and spray with oil again before flipping each slice, spraying once more, then bake another 10 minutes until fully cooked and nicely browned on both sides.
