2 medium sweet potatoes
1/2 cup dry black lentils
2 tablespoons maple syrup or honey
1 tablespoon white miso
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
1 teaspoon sesame oil
1 teaspoon ginger, peeled and microplaned
1 garlic clove, minced
Directions
- Preheat oven to 425 F and prick sweet potatoes with fork. Roast for 40-50 minutes on tray until tender and bubbling, then remove and let cool.
- Whisk together maple syrup, miso, soy sauce, vinegar, sesame oil, ginger, and garlic until it forms a smooth sauce.
- Boil lentils 20 minutes in salted water until tender, then drain completely and toss through the sauce.
- Split open sweet potatoes lengthwise, and pour the lentils on top, then serve.
