Ingredients

  • 2 medium sweet potatoes

  • 1/2 cup dry black lentils

  • 2 tablespoons maple syrup or honey

  • 1 tablespoon white miso

  • 1 tablespoon soy sauce

  • 1 tablespoon rice wine vinegar

  • 1 teaspoon sesame oil

  • 1 teaspoon ginger, peeled and microplaned

  • 1 garlic clove, minced

Directions

  • Preheat oven to 425 F and prick sweet potatoes with fork. Roast for 40-50 minutes on tray until tender and bubbling, then remove and let cool.
  • Whisk together maple syrup, miso, soy sauce, vinegar, sesame oil, ginger, and garlic until it forms a smooth sauce.
  • Boil lentils 20 minutes in salted water until tender, then drain completely and toss through the sauce.
  • Split open sweet potatoes lengthwise, and pour the lentils on top, then serve.
