2 tablespoons rice
1 1/2 cups milk
7-8 strands saffron
1/8 teaspoon cardamom
1 tablespoon honey
1 teaspoon brown sugar
pinch salt
Optional toppings, such as: pistachios, dried cherries, or dried cranberries
Directions
- Rinse rice under cold water until it runs clear, soak for 20 minutes.
- Heat milk in small saucepan on low until it reaches a simmer.
- Take 1 tablespoon of hot milk aside in a bowl, add saffron, then set aside.
- Add strained rice into the pot of hot milk, and cook for 10 minutes, stirring occasionally.
- Stir cardamom through sugar, ensuring there are no lumps, then add into pot with honey and pinch of salt, cooking for another 5-10 minutes until rice is soft.
- Stir through the saffron cardamom milk, cooking another couple minutes on low until thickened.
- Serve with pistachios and dried cherries or cranberries sprinkled on top.
