Ingredients

  • 2 tablespoons rice

  • 1 1/2 cups milk

  • 7-8 strands saffron

  • 1/8 teaspoon cardamom

  • 1 tablespoon honey

  • 1 teaspoon brown sugar

  • pinch salt

  • Optional toppings, such as: pistachios, dried cherries, or dried cranberries

Directions

  • Rinse rice under cold water until it runs clear, soak for 20 minutes.
  • Heat milk in small saucepan on low until it reaches a simmer.
  • Take 1 tablespoon of hot milk aside in a bowl, add saffron, then set aside.
  • Add strained rice into the pot of hot milk, and cook for 10 minutes, stirring occasionally.
  • Stir cardamom through sugar, ensuring there are no lumps, then add into pot with honey and pinch of salt, cooking for another 5-10 minutes until rice is soft.
  • Stir through the saffron cardamom milk, cooking another couple minutes on low until thickened.
  • Serve with pistachios and dried cherries or cranberries sprinkled on top.
