Ingredients
1 tablespoon olive oil
2 medium carrots, shredded
1 large or 2 small zucchini, shredded
1/2 medium onion, sliced finely
2 garlic cloves, minced
1 cup quick cook oats
3/4 cup chicken broth
450 grams minced chicken (white meat)
450 grams minced chicken (dark meat)
1 tablespoon Worcestershire sauce
1 tablespoon ketchup, plus extra
1 egg
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon red pepper
Directions
- Preheat oven to 375 F.
- Saute onion, carrot, and zucchini in olive oil over medium heat until softened, 3-4 minutes.
- While vegetables cook, add broth to oats and let soak.
- Mix together cooked vegetables with oats, minced chicken, and all other ingredients, but avoid overmixing.
- Pour mixture into loaf pan, or shape into mini loaves on baking sheet, and glaze top with ketchup.
- Bake for at least 1 hour – or until internal temperature reaches 165 F.
