100 grams sourdough starter
150 grams all-purpose flour
60 grams whole wheat flour
115 grams water
5 grams salt
Directions
- Day 1: Evening
- Combine all ingredients, and knead together until smooth.
- Stretch and fold the dough, then rest 1-2 hours before resting overnight.
- Day 2: Morning
- Shape dough into 4 or 6 balls, rolling to create tension, then rest until noticeably risen, approximately 3 hours.
- Preheat oven to 425 F, slash the top of each roll, then put into the oven, spraying with water.
- Bake 20-30 minutes until deep golden-brown
Notes
- Timing can be adjusted – especially if particularly hot.
