Ingredients

  • 100 grams sourdough starter

  • 150 grams all-purpose flour

  • 60 grams whole wheat flour

  • 115 grams water

  • 5 grams salt

Directions

  • Day 1: Evening
  • Combine all ingredients, and knead together until smooth.
  • Stretch and fold the dough, then rest 1-2 hours before resting overnight.
  • Day 2: Morning
  • Shape dough into 4 or 6 balls, rolling to create tension, then rest until noticeably risen, approximately 3 hours.
  • Preheat oven to 425 F, slash the top of each roll, then put into the oven, spraying with water.
  • Bake 20-30 minutes until deep golden-brown

Notes

  • Timing can be adjusted – especially if particularly hot.
