120 grams flour
1 teaspoon baking powder
1/2 teaspoon salt
50 grams sugar
25 grams brown sugar
60 grams butter, room temperature
1 large egg, room temperature
60 grams sour cream, room temperature
1/2 teaspoon vanilla extract
30 ml milk, room temperature
1/4 teaspoon lemon zest
1.5 cups blueberries
Directions
- Mix dry ingredients together – flour, baking powder, salt.
- Cream butter and sugars together in mixer on high until light and fluffy, 2-3 minutes.
- Add egg on medium, mix 1 more minute. Then add sour cream and vanilla, mixing for another minute.
- With mixer on low, add half the flour mixture, then milk and lemon zest, then remaining flour mixture until just combined.
- Rest batter for up to 1 hour. Preheat oven to 200 Celsius, fan-forced.
- Combine blueberries with 1 teaspoon flour, then add to batter.
- Pour batter into 6 prepared muffin tins, then bake for 22-25 minutes until toothpick comes out clean.
