Ingredients

  • 120 grams flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 50 grams sugar

  • 25 grams brown sugar

  • 60 grams butter, room temperature

  • 1 large egg, room temperature

  • 60 grams sour cream, room temperature

  • 1/2 teaspoon vanilla extract

  • 30 ml milk, room temperature

  • 1/4 teaspoon lemon zest

  • 1.5 cups blueberries

Directions

  • Mix dry ingredients together – flour, baking powder, salt.
  • Cream butter and sugars together in mixer on high until light and fluffy, 2-3 minutes.
  • Add egg on medium, mix 1 more minute. Then add sour cream and vanilla, mixing for another minute.
  • With mixer on low, add half the flour mixture, then milk and lemon zest, then remaining flour mixture until just combined.
  • Rest batter for up to 1 hour. Preheat oven to 200 Celsius, fan-forced.
  • Combine blueberries with 1 teaspoon flour, then add to batter.
  • Pour batter into 6 prepared muffin tins, then bake for 22-25 minutes until toothpick comes out clean.
