Sourdough waffles

Ingredients

  • 100 grams sourdough starter

  • 100 grams all-purpose flour

  • 20 grams whole wheat flour

  • 1 tablespoon sugar

  • 1 cup buttermilk (can use regular milk + 1 tablespoon lemon juice/vinegar)

  • 1 large egg

  • 30 grams melted butter, slightly cooled

  • 1/2 teaspoon baking soda

Directions

  • Night before
  • Mix together starter, flours, sugar and buttermilk.
  • Cover and let rest for about 12 hours or overnight.
  • Day of
  • Beat together eggs with butter and add to batter, stirring to just combine.
  • Add salt and baking soda, stirring to combine.
  • Start waffle pan heating over burner on medium heat.
  • Brush melted butter onto waffle pan and pour 1/4 batter into pan, flipping after 2-4 minutes once browned on the bottom.
  • Keep waffles warm in oven while cooking remaining 3 batches.
