100 grams sourdough starter
100 grams all-purpose flour
20 grams whole wheat flour
1 tablespoon sugar
1 cup buttermilk (can use regular milk + 1 tablespoon lemon juice/vinegar)
1 large egg
30 grams melted butter, slightly cooled
1/2 teaspoon baking soda
Directions
- Night before
- Mix together starter, flours, sugar and buttermilk.
- Cover and let rest for about 12 hours or overnight.
- Day of
- Beat together eggs with butter and add to batter, stirring to just combine.
- Add salt and baking soda, stirring to combine.
- Start waffle pan heating over burner on medium heat.
- Brush melted butter onto waffle pan and pour 1/4 batter into pan, flipping after 2-4 minutes once browned on the bottom.
- Keep waffles warm in oven while cooking remaining 3 batches.
