Ingredients
50 grams butter
2 tablespoons dark chocolate
6 tablespoons sugar
4 tablespoons brown sugar
1/2 teaspoon vanilla extract
1 egg, room temperature
5 tablespoons cocoa powder
4 tablespoons flour
2 tablespoons almond flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon espresso powder
Optional: 1/3 cup pistachios or chocolate chips
Directions
- Preheat oven to 350F, and line a loaf pan with parchment paper.
- Melt butter and chocolate together in the microwave, stopping to stir frequently.
- Whisk sugars and vanilla through, and once mixture is cool, continue whisking vanilla and egg until fully combined.
- In a separate bowl, stir together the dry ingredients: cocoa powder, flour, almond flour, baking powder, salt, and espresso powder, along with any optional extras, such as pistachios.
- Fold dry ingredients into chocolate mixture until thoroughly combined, then scrape into loaf pan.
- Bake for 25-30 minutes until toothpick comes out with moist crumbs.
- Let cool completely on wire rack, then cut into 6 pieces for serving.
