Ingredients

  • 1 packet (300 grams) very firm tofu

  • 2 tablespoons brown sugar

  • 2 tablespoons miso paste

  • 1 tablespoon gochujang

  • 2 tablespoons soy sauce

  • 1 tablespoon rice wine vinegar

  • 1 tablespoon fish sauce

  • 1 tablespoon vegetable oil

Directions

  • Night before
  • Slice tofu in half lengthwise, then put towels underneath and on top. Put a cutting board on top with heavy books, and drain for 45 minutes.
  • Combine all remaining ingredients together until smooth. Tear tofu into bite-sized pieces, and add to sauce, tossing to coat. Marinate overnight for up to 24 hours.
  • Day of
  • Preheat air fryer on hottest setting, then add pieces of tofu, reserving extra marinade.
  • Cook for 10-15 minutes until browned, stirring occasionally, then remove and drizzle with remaining marinade.
