1 packet (300 grams) very firm tofu
2 tablespoons brown sugar
2 tablespoons miso paste
1 tablespoon gochujang
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon fish sauce
1 tablespoon vegetable oil
Directions
- Night before
- Slice tofu in half lengthwise, then put towels underneath and on top. Put a cutting board on top with heavy books, and drain for 45 minutes.
- Combine all remaining ingredients together until smooth. Tear tofu into bite-sized pieces, and add to sauce, tossing to coat. Marinate overnight for up to 24 hours.
- Day of
- Preheat air fryer on hottest setting, then add pieces of tofu, reserving extra marinade.
- Cook for 10-15 minutes until browned, stirring occasionally, then remove and drizzle with remaining marinade.
