Ingredients

  • 2 portions noodles, ramen or udon or otherwise

  • 1/2 teaspoon sea salt

  • 1/2 teaspoon brown sugar

  • 100 ml water

  • Half 350g packet of firm tofu (freeze remainder)

  • Dressing
  • 1 teaspoon grated ginger

  • 1 teaspoon grated garlic

  • 1 tablespoon light soy sauce

  • 1/2 tablespoon balsamic vinegar

  • 1/2 tablespoon rice vinegar

  • 1 chili, chopped OR 1 teaspoon chili sauce

Directions

  • Boil water, add salt, and cook noodles.
  • Combine sugar, salt, water, drained tofu (ripped into pieces) in large bowl and process with stick blender until completely smooth.
  • Combine all dressing ingredients in separate bowl.
  • After draining noodles, pour creamy tofu over the top, then dressing, and mix thoroughly before serving.
