Ingredients
2 portions noodles, ramen or udon or otherwise
1/2 teaspoon sea salt
1/2 teaspoon brown sugar
100 ml water
Half 350g packet of firm tofu (freeze remainder)
- Dressing
1 teaspoon grated ginger
1 teaspoon grated garlic
1 tablespoon light soy sauce
1/2 tablespoon balsamic vinegar
1/2 tablespoon rice vinegar
1 chili, chopped OR 1 teaspoon chili sauce
Directions
- Boil water, add salt, and cook noodles.
- Combine sugar, salt, water, drained tofu (ripped into pieces) in large bowl and process with stick blender until completely smooth.
- Combine all dressing ingredients in separate bowl.
- After draining noodles, pour creamy tofu over the top, then dressing, and mix thoroughly before serving.
