Ingredients
- Crust
25 grams whole wheat flour
100 grams all purpose flour
1/4 tsp salt
1 tsp sugar (approx 5 grams)
70 grams (5 tbsp) butter, cold and cut in small pieces
35 grams (2.5 tbsp) greek yogurt or sour cream
20-30 ml (1.5-2 tbsp) ice water

Approx 280 grams sliced fruit
12 ml (2.5 tsp) lemon or lime juice, plus zest
30-50 grams (3-4 tbsp) sugar
8-12 grams (3-4 tsp) corn starch
1 tbsp raw sugar, for sprinkling on top
Directions
- Mix dry ingredients in a bowl: wheat flour, AP flour, salt, and sugar. Then cut in the cold butter until it looks like small peas.
- Add the yogurt/sour cream and as little water as possible to allow the mixture to hold together before wrapping in cling film. Refrigerate for at least 1 hour.
- Roll out the dough between 2 pieces of parchment paper, lifting and adding additional flour to prevent sticking as required. Refrigerate while prepping fruit.
- Preheat oven to 200C fan-forced. Cut or slice fruit, then mix with all other ingredients before arranging fruit evenly on top of dough.
- Bake for 25-35 minutes until golden brown with bubbling fruit. Cool completely before cutting and serving.
