Kale or chard, cleaned and chopped
1/4 cup of seeds or nuts, such as pine nuts, pumpkin seeds, sunflower seeds, cashews or other nuts
4 tablespoons olive oil
2-3 cloves garlic
1/4 cup Parmesan cheese, grated
1/4 teaspoon salt and pepper
Basil leaves
Optional: green beans, frozen peas, or other greens
Directions
- Saute greens in 1 tbsp olive oil until fully wilted, then set aside to cool.
- Blend seeds/nuts with garlic in food processor, then drizzle in 3 tbsp olive oil and blend until smooth.
- Add greens, Parmesan, salt, and basil, then blend until smooth.
- Cook pasta, reserving some cooking water, then mix together.
