Ingredients

  • 50 grams butter

  • 2 tablespoons dark chocolate

  • 6 tablespoons sugar

  • 4 tablespoons brown sugar

  • 1/2 teaspoon vanilla extract

  • 1 egg, room temperature

  • 5 tablespoons cocoa powder

  • 4 tablespoons flour

  • 2 tablespoons almond flour

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon espresso powder

  • Optional: 1/3 cup pistachios or chocolate chips

Directions

  • Preheat oven to 350F, and line a loaf pan with parchment paper.
  • Melt butter and chocolate together in the microwave, stopping to stir frequently.
  • Whisk sugars and vanilla through, and once mixture is cool, continue whisking vanilla and egg until fully combined.
  • In a separate bowl, stir together the dry ingredients: cocoa powder, flour, almond flour, baking powder, salt, and espresso powder, along with any optional extras, such as pistachios.
  • Fold dry ingredients into chocolate mixture until thoroughly combined, then scrape into loaf pan.
  • Bake for 25-30 minutes until toothpick comes out with moist crumbs.
  • Let cool completely on wire rack, then cut into 6 pieces for serving.
