Ingredients
150 grams Brussels sprouts
1/2 medium red onion
1/3 cup chickpea flour
2 tablespoons lentil powder
2 tablespoons potato starch
1 inch ginger, peeled and microplane grated
1/2 teaspoon gochugaru
1/2 teaspoon garam masala
1/4 tsp turmeric powder
1/2 teaspoon salt
1/4-1/3 cup cold water
Optional: 1 small chili, minced
Directions
- Preheat air fryer to 400F for 2 minutes, then spray basket with oil once hot.
- In mixing bowl, combine all dry ingredients: chickpea flour, lentil powder, potato starch, gochugaru, garam masala, turmeric, and salt.
- Cut sprouts in half and thinly slice. Thinly slice the red onion. Add both with ginger and optional chili to dry ingredients, mixing thoroughly.
- Slowly add cold water to make a thick batter. Start with 1/4 cup cold water and add up to 2 more tablespoons as needed, mixing well to ensure no lumps or dry bits of flour.
- Drop the batter (around 2 tablespoons each) in a single layer, not touching, flattening slightly before spraying with oil on top.
- Air fry at 350F for 8-10 minutes, then spray with oil, flip, spray again, and air fry for another 2-3 minutes at 400F until crispy.
- Cook a second batch if required to use remaining batter, giving a good mix before dropping in the air fryer if it’s been sitting for a while.
