Ingredients

  • 70g de-stemmed fresh herbs (leaves only), such as parsley, dill, etc.

  • 50g fresh greens, such as spinach, kale, etc.

  • 40g green onion, roughly chopped

  • 1 clove garlic

  • 40g dried cranberries

  • 40g nuts, toasted, such as macadamias, pistachios, etc.

  • 4 large eggs

  • 1/2 tsp fine salt

  • 1/2 tsp cumin seeds + 1/2 tsp fennel seeds, lightly toasted then ground together

  • 1/4 tsp ground turmeric

  • 1/8 tsp ground cinnamon

  • 15 ml olive oil

Directions

  • Preheat oven to 160C fan forced.
  • Place all greens in food processor and pulse until finely chopped, scraping down bowl as needed. Empty into a large bowl.
  • Add garlic, cranberries, and nuts to the food processor, pulsing until finely chopped, then add to greens, mixing together.
  • Add eggs and spices to the food processor on high for 10 seconds, then stir through the greens and nut mixture.
  • Pour the olive oil into a pan, then pour the mixture on top and smooth over.
  • Bake for 20 minutes, remove from oven, cut into squares, flip over, and bake for 10 more minutes.
