Ingredients
70g de-stemmed fresh herbs (leaves only), such as parsley, dill, etc.
50g fresh greens, such as spinach, kale, etc.
40g green onion, roughly chopped
1 clove garlic
40g dried cranberries
40g nuts, toasted, such as macadamias, pistachios, etc.
4 large eggs
1/2 tsp fine salt
1/2 tsp cumin seeds + 1/2 tsp fennel seeds, lightly toasted then ground together
1/4 tsp ground turmeric
1/8 tsp ground cinnamon
15 ml olive oil
Directions
- Preheat oven to 160C fan forced.
- Place all greens in food processor and pulse until finely chopped, scraping down bowl as needed. Empty into a large bowl.
- Add garlic, cranberries, and nuts to the food processor, pulsing until finely chopped, then add to greens, mixing together.
- Add eggs and spices to the food processor on high for 10 seconds, then stir through the greens and nut mixture.
- Pour the olive oil into a pan, then pour the mixture on top and smooth over.
- Bake for 20 minutes, remove from oven, cut into squares, flip over, and bake for 10 more minutes.
