Ingredients
70g de-stemmed fresh herbs (leaves only), such as parsley, dill, etc.
50g fresh greens, such as spinach, kale, etc.
40g green onion, roughly chopped
40g nuts, toasted, such as macadamias, pistachios, etc.
2 cloves garlic
40g dried cranberries
4 large eggs
1/2 tsp fine salt
1/2 tsp cumin seeds + 1/2 tsp fennel seeds, lightly toasted then ground together
1/4 tsp ground turmeric
1/8 tsp ground cinnamon
10 ml olive oil
Directions
- Preheat oven to 160C fan forced, and add square metal pan to the oven while prepping.
- Place all greens in food processor and pulse until finely chopped, scraping down bowl as needed. Empty into a large bowl.
- Add nuts to the food processor, pulsing until finely chopped, then pulse together with cranberries and garlic before mixing into the greens.
- Add eggs and spices to the food processor on high for 10 seconds, then stir through the greens and nut mixture.
- Pull out the pan, add the oil and swirl gently, then pour the egg batter in evenly, smoothing the top out.
- Bake for 25 minutes, remove from oven, cut in half, flip over, and bake for 10 more minutes until golden-brown.
