Ingredients

  • 70g de-stemmed fresh herbs (leaves only), such as parsley, dill, etc.

  • 50g fresh greens, such as spinach, kale, etc.

  • 40g green onion, roughly chopped

  • 40g nuts, toasted, such as macadamias, pistachios, etc.

  • 2 cloves garlic

  • 40g dried cranberries

  • 4 large eggs

  • 1/2 tsp fine salt

  • 1/2 tsp cumin seeds + 1/2 tsp fennel seeds, lightly toasted then ground together

  • 1/4 tsp ground turmeric

  • 1/8 tsp ground cinnamon

  • 10 ml olive oil

Directions

  • Preheat oven to 160C fan forced, and add square metal pan to the oven while prepping.
  • Place all greens in food processor and pulse until finely chopped, scraping down bowl as needed. Empty into a large bowl.
  • Add nuts to the food processor, pulsing until finely chopped, then pulse together with cranberries and garlic before mixing into the greens.
  • Add eggs and spices to the food processor on high for 10 seconds, then stir through the greens and nut mixture.
  • Pull out the pan, add the oil and swirl gently, then pour the egg batter in evenly, smoothing the top out.
  • Bake for 25 minutes, remove from oven, cut in half, flip over, and bake for 10 more minutes until golden-brown.
