Ingredients
1/2 cauliflower, leaves removed (about 250g)
2 garlic cloves, chopped
1/4 tsp Chinese five spice powder
1 tbsp light soy sauce
1 tbsp honey
1 tsp dark soy sauce
1 tbsp hoisin sauce
1 cube red fermented bean curd
1 tbsp brandy
Directions
- Preheat oven to 220C fan-forced with large cast-iron pan for at least 20 minutes.
- Cut cauliflower into florets and stem pieces, then drizzle lightly with vegetable oil plus salt and pepper.
- Add to hot cast-iron pan with as much of the cut sides down as possible, then roast for 8-12 minutes, stir gently, then another 5-8 minutes until lightly browned.
- Combine all remaining ingredients together for the sauce, mixing with stick blender until smooth.
- Remove the cauliflower from the oven, and toss with two-thirds of the sauce before roasting for another 5 minutes.
- Add the remaining sauce, then roast for another 2-4 minutes until sticky, watching closely to ensure it doesn’t burn.
